Meal A: Bibimbap (Korean rice dish) (“bee-BEEM-bop”)
While I have never been to Korea, I have tried this dish in a number of restaurants and love it everytime. I like to think of Bibimbap as an Asian-style buddha bowl with a kick. Close your eyes and imagine your mouth closing down upon bite after bite of white jasmine rice, seasoned tofu, kimchi, Frinklepod chili sauce, and shreds of fresh veggies.
Meal B: Emmer Wheatberry Salad with fresh Microgreens
This scrumptious, salad is delicious warm or chilled, after the flavors of the fresh veggies, herbs, and lemon vinaigrette have had ample time to mingle with the trio of proteins - emmer, chickpeas, and almonds. We are excited to be able to include our very first harvest of fresh microgreens in this meal kit!
Emmer is an ancient ancestor of wheat - high in protein and low in gluten, making it a great choice for people who are sensitive to more common, hybridized types of wheat.
